
One-Pot African Peanut Stew By Making Thyme For Health
Ingredients
- 1 tbsp extra virgin olive oil
- 1 onion, finely chopped (about 2 cups)
- 4 garlic cloves
- 1 jalapeno
- 2 tbsp 2 inch knob fresh ginger, peeled and minced
- 2 tsp cumin
- 1/4 tsp cayenne
- 3 tbsp tomato paste
- 1 lb sweet potato, peeled and cut into 1-inch cubes
- 1/2 cup unsweetened creamy peanut butter
- 4 cup vegetable broth
- 1 cup water
- 1 bunch collard greens
- fresh cilantro, cooked brown rice, roasted peanuts and lime juice for serving
