
South African Bobotie with Yellow Rice By Foodie On Board
Ingredients
- 1 tbsp olive oil
- 2 cup chopped onions
- 1 tbsp ground ginger
- 1 tbsp curry powder
- 1 tbsp ground turmeric
- 1 tbsp brown sugar
- 11/2 lb extra lean ground beef
- 1/4 cup dried breadcrumbs
- 1/2 cup raisins
- 2 tbsp white vinegar
- 2 tbsp tomato paste
- 2 tbsp mango chutney
- 1 tbsp apricot jam or orange marmalade
- salt and freshly ground black pepper
Topping:
- 2 eggs
- 11/2 cup light cream
- pinch salt
- 1 tbsp grated lemon zest
Yellow Rice
- 3 cup water
- 2 cup white basmati rice
- 2 tsp ground turmeric
- 3 1-inch pieces cinnamon stick
- 1 cup raisins
- 1 tbsp sea salt
