
Nigerian Mixed Grill Suya By Tasting Table
Ingredients
For the Suya Spice Blend:
- 3 tbsp cayenne pepper
- 1 1/2 tbsp roasted peanuts
- 1 tbsp smoked sweet paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp ground ginger
- 1/2 tsp kosher salt
- 2 Maggi bouillon cubes, ground into a fine powder
For the Suya:
- 1 lb jumbo shrimp
- 1 lb Wagyu rib eye, thinly sliced into strips
- 1 lb boneless chicken thighs
- 12 -inch bamboo skewers
- Lime wedges
- Chopped parsley
For the Roasted Tomato Soubise:
- 2 medium vine-ripe tomatoes, stemmed
- 1 tbsp olive oil
- Kosher salt
- 2 tbsp canola oil
- 1 medium white onion
- 1 cup heavy cream
- 1/2 cup whole milk
