
Moroccan Beef Tajine By From The Grape Vine
Ingredients
- 1/4 cup olive oil
- 2 lb stewing beef
- 1 large onion
- 3 cloves garlic
- 1 large tomato
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp turmeric powder
- 1/2 tsp cinnamon
- 1 tsp ginger
- 1 large bay leaf
- 1 tsp cumin
- 3-4 cup water or stock, to cover meat
- 1 cup cooked chickpeas
- 2 large potatoes, quartered
- 1/2 medium butternut squash
- 1/2 small head cabbage
- 2 honey or silan date honey
- Fresh cilantro or parsley to serve
