Ingredients
- 1 large onion, chopped
- 4 cloves of garlic, finely chopped or pressed
- 3 tbsp olive oil
- 1 1/4 tsp of salt, or to taste
- 1 tsp ginger
- 1 tsp turmeric
- 3/4 tsp cinnamon
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/8 tsp Ras el hanout, or more to taste
- 2 or 3 tbsp of chopped parsley or cilantro
- 4 to 5 carrots, peeled and cut into 1/4-inch thick sticks
- 1 cup water
- 2 to 3 tsp of honey, or to taste
- 1 to 2 cups of chickpeas, cooked or canned
- 1 or 2 small chili peppers
- 1/4 cup golden raisins
- Additional parsley or cilantro
