Ingredients
Bobotie Mince Filling
- 2 slices of white bread, crusts removed
- ½ C (125 ml) milk
- olive oil for frying
- 1 kg pork mince
- 1 large onion, chopped
- 2 cloves
- 2 bay leaves
- 3 tbsp mild curry powder
- 1 tbsp 1 Tbsp (15 ml) cumin powder
- coriander powder
- 1 tsp turmeric powder
- 1 tsp chilli flakes
- 3 garlic cloves, finely chopped
- 1 tbsp chopped ginger
- ½ cup white vinegar
- 2 green apples, peeled and grated
- ½ cup hot chutney
- ½ cup raisins
- 2 tbsp soy sauce
- a squeeze of lemon juice
- salt and pepper
Pastry
- 450 g cake flour
- 1 tsp salt
- ⅘ cup water
- 180 g butter
- 6 x 9×5 cm mini loose-bottomed pie tins
- 1 egg, whisked for egg washing the pastry
Apricot Rice
- 1 cup long-grain white rice,
- 6 dried Turkish apricots,
- ½ tsp turmeric powder
- 2 tbsp flaked almonds
