Ingredients
- 2½ cups cassava flour
- 15 ripe sweet bananas
- Water (room temperature)
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup sugar
- Vegetable oil for deep frying)
Instructions
Prepare the Ingredients:
- Ensure your hands are clean, as this recipe involves a lot of hand mixing.
- Peel the bananas and smash them with your hands until they are very soft.
Mix the Dough:
- In a large bowl, mix the cassava flour with baking powder, salt, and sugar.
- Add the smashed bananas to the flour mixture. Mix well until combined.
- Gradually add water to the mixture and knead until the dough is soft but not sticky.
Shape the Pancakes:
- Place the dough on a chopping board. Roll it out to your desired thickness.
- Use a glass or cup to cut out circular shapes from the dough.
Fry the Pancakes:
- Heat vegetable oil in a deep frying pan over medium heat.
- Carefully place the shaped dough into the hot oil, deep frying until the pancakes are golden brown and cooked through.
- Remove the pancakes from the oil and drain on paper towels.
Serve:
- Enjoy the pancakes warm, perfect for breakfast or as a snack. You can experiment by adding cinnamon, chili powder, or vanilla to the batter for different flavors.
