Asun is a spicy, roasted goat meat dish originating from the Yoruba-speaking Ondo people of Western Nigeria. This dish is known for its smokey, sizzling, and spicy flavors, making it a delightful treat for those who love heat in their food!

Ingredients
For Boiled Goat Meat:
- 2 ½ - 3 pounds goat meat cut into small pieces
- ½ cup chopped onion
- 2 tsp or more Maggi, beef, or bouillon powder (adjust to taste)
- 1 cup water or more
- Salt and pepper to taste
For Stir Fry:
- 3-4 tbsp cooking oil
- 2 tsp minced garlic
- 1 tsp minced ginger
- 1 medium onion sliced
- 2 large tomatoes Roma tomatoes preferred
- 1 tsp white pepper
- 1 tsp smoked paprika
- 2 green onions sliced
- ½ tsp curry powder optional
- 2 or more Scotch bonnet peppers adjust to taste
- Red and/or green bell pepper sliced
- 1 tbsp beef or chicken bouillon
Instructions
- Boil the Goat Meat:In a medium pot, combine the goat meat with salt, pepper, bouillon powder, and chopped onions. Add enough water to cook the meat, ensuring the liquid barely covers it.Boil until the goat meat is tender. For faster cooking, use a pressure cooker or Instant Pot with 1 cup of water.Once cooked, remove the goat meat using a slotted spoon and place it on a lined baking tray.
- Roast the Goat:Preheat your broiler to low. Broil the goat meat for about 10 minutes, rotating every few minutes until browned and slightly crispy.
- Prepare the Stir Fry:Heat oil in a large skillet over medium heat.Add the onions, garlic, and ginger. Stir and sauté for about 1 minute until fragrant.Add the chopped tomatoes, white pepper, paprika, green onions, curry powder (if using), Scotch bonnet peppers, and bouillon.Cook the mixture for 5-7 minutes, stirring occasionally.
- Combine the Goat and Vegetables:Add the roasted goat meat and sliced bell peppers to the skillet.Stir everything together and cook for an additional 3 minutes, allowing the flavors to meld.Adjust seasonings to taste.
- Serve:Serve the Asun warm, and enjoy its fiery, smoky flavors.

- Adjust Spice Level: Feel free to increase or decrease the Scotch bonnet peppers based on your heat tolerance.
- Alternative Meats: While goat is traditional, you can substitute it with lamb or beef if preferred.
