
West African Beef Kabobs (Suya)
These West African Beef Kabobs offer a delightful blend of smoky flavors and tender beef, marinated in a rich peanut and spice mixture. Inspired by the popular street food "Suya," these kabobs are grilled to perfection, making them an excellent choice for a vibrant and flavorful meal.

- 1 lb sirloin steak
- 1 small onion
- 2 tbsp peanut butter
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 2 tsp All Spice
- 1/2 tsp salt
- 1/4 tsp crushed red pepper
- 1/4 tsp powdered ginger
- Cooking spray
Instructions
1. Prepare the Marinade
- Chop the Onion: Finely chop half of the small onion. Reserve the other half and cut it into 1-inch squares for the kabobs.Combine Ingredients: In a large bowl, mix the 1/4 cup peanut butter, 1 tbsp tomato paste, 2 tbsp olive oil, the chopped half onion, 1 tsp salt, 1 tsp cayenne pepper (or crushed red pepper), 1/2 tsp powdered ginger, 1 tbsp paprika, 1 tsp cumin, and 1 tsp garlic powder.Mix Thoroughly: Whisk or stir until the marinade is smooth and uniform.
2. Marinate the Beef
- Cut the Beef: Cut the 1 lb sirloin steak into 1-inch (2.5 cm) cubes.Coat: Toss the beef cubes into the marinade bowl and ensure every piece is completely coated.Chill: Cover the bowl and refrigerate for a minimum of 2 hours, or up to 12 hours, for maximum flavor.
3. Assemble and Grill
- Prep Skewers & Veggies: Soak wooden skewers in water for 30 minutes. Cut the red bell pepper and reserved half-onion into 1-inch pieces.Thread: Thread the marinated beef cubes onto the skewers, alternating with the red bell pepper and onion pieces.Grill: Preheat your grill to medium-high heat. Lightly coat the grill grate with cooking oil (instead of cooking spray, which can burn).Cook: Grill the kabobs for 12-16 minutes, turning every 3-4 minutes, until the beef is cooked to your preferred doneness (Medium: 135-145°F).Serve: Let them rest for 5 minutes before serving with extra chopped peanuts or onions, if desired!
Notes
- For an extra smoky flavor, use a charcoal grill.
- You can serve these kabobs with a side of jollof rice, plantains, or a simple fresh salad.
- A sprinkle of chopped roasted peanuts or extra chopped onions can be added after grilling for authentic Suya street food flair.
- If you don't have all the individual spices, you can use a pre-made Suya spice blend.
