
North African Meatballs With Bone Broth By Broth Masters
Ingredients
Saffron Tomato Sauce
- 2 tbsp olive oil
- 1 1/2 cup finely diced onion
- 3 garlic cloves
- 2 tbsp tomato paste
- 1 inch piece cinnamon stick
- Large pinch saffron
- Salt and pepper
- 3 cup BrothMasters bone broth
Meatballs
- 1 1/2 cup cubed day-old firm white bread
- 1 cup milk
- 1/2 lb ground turkey
- 1/2 lb ground beef
- 1 large egg, beaten
- 1 tsp salt
- 1/4 tsp black pepper
- 4 garlic cloves, minced
- 1/8 tsp grated nutmeg
- 1 tsp ground ginger
- 1 tsp turmeric
- 2 tsp paprika
- 1/4 tsp cayenne
- 1/4 tsp ground cloves
- 1/4 tsp ground coriander
- 1/2 tsp ground cumin
- 3 tbsp chopped parsley
- 3 tbsp chopped cilantro
- 3 tbsp finely chopped scallion
- All-purpose flour
- Olive oil or vegetable oil
Couscous or brown basmati rice (optional)
- 1 cup giant couscous, m’hamsa, or medium couscous
- 2 tbsp butter
- 1/2 cup golden raisins, soaked in hot water to soften, then drained Salt
