
Ethiopian Sweet Potato Burger By One Green Planet
Ingredients
For the Burgers:
- 1 lb sweet potatoes, peeled and chopped
- 4 tbsp nitter kibbeh, divided
- 1/2 cup brown or green lentils
- 2 cups water
- 2/3 cup gluten-free quick-cooking oats
- 1/3 cup roasted peanuts,
- 1 tsp paprika
- 1 tsp ground coriander
- Sea salt and fresh ground black pepper
- 3 scallions
- 2 celery ribs, minced
- 1 medium ripe tomato, chopped
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- 1 tbsp neutral oil
- 1/2 cup vegan mayonnaise
- 4 burger buns, toasted
For the Nitter Kibbeh Aioli:
- 1/2 cup neutral oil
- 1/4 cup chopped onions
- 1 tablespoon chopped garlic
- 1-inch piece of ginger, sliced
- 6 cardamom pods
- 2 whole cloves
- 1 cinnamon stick
- 2 tsp coriander seeds
- 1 tsp cumin seeds
- 1/2 tsp black peppercorns
- 1/2 tsp fenugreek seeds
- 1/4 tsp ground turmeric
- 1 tbsp paprika
- 3 tsp cayenne
- 1/2 tsp sea salt
