Equipment

Ingredients

  • 2 tbsp olive oil
  • 4 medium ripe tomatoes, halved, seeded and grated
  • 6 cloves garlic, minced
  • 2 tbsp fresh flat-leaf parsley, finely chopped
  • 2 tbsp fresh cilantro, finely chopped
  • 1 tsp sweet paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground cumin
  • 1 bay leaf
  • 1 1/2 pounds large shrimp, peeled, tails left on
  • freshly ground black pepper
  • 3 slices lemon, halved

Instructions

  • Cook the Tomatoes and Garlic:
In a tagine, flameproof casserole, or heavy skillet, heat the olive oil over medium heat.
Add the chopped tomatoes and minced garlic, cooking uncovered until the tomatoes become deeper red and pulpy, about 12 minutes.
  • Add Spices and Herbs:
Reduce the heat to low. Stir in the parsley, cilantro, paprika, cayenne, and cumin.
Add the bay leaf and season with salt and pepper.
  • Cook the Shrimp:
Place the shrimp on top of the tomato mixture and cook for 1 minute before turning them.
Arrange the lemon slices around the edges of the dish and drizzle 2 tablespoons of water along the side.
Cover with a lid and cook for 10 minutes until the shrimp are cooked through.
  • Serve:
Serve the shrimp bubbling hot directly in the tagine.

Notes

  • Heat Adjustment: This recipe is mildly spiced, but you can increase the cayenne pepper for more heat.
  • Serving Suggestions: Serve this dish with couscous or crusty bread to soak up the flavorful sauce.
  • Presentation Tip: The shrimp tagine can be served directly from the tagine or skillet for a rustic, bubbling presentation.
