Malva Pudding is a beloved South African dessert that is sweet, buttery, and moist, making it perfect for indulging. With its combination of apricot jam and a rich butter sauce, this pudding is irresistible, especially served warm with whipped cream or ice cream.
Preheat the Oven:Preheat your oven to 350°F (180°C). Butter an 8x11-inch oven-safe pan.
Prepare the Dry Ingredients:Sift the flour, baking soda, and salt into a large bowl.
1 tsp baking soda, Pinch salt
Combine the Wet Ingredients:In a separate bowl, combine the egg, sugar, butter, and apricot jam. Beat together until the mixture is pale in color and smooth.
¼ cup apricot jam , 1 egg, 1/4 cup sugar, 8 tbsp unsalted butter
Incorporate Dry Ingredients:Gradually add the sifted flour mixture to the egg mixture and beat until well combined.
1 cup all-purpose flour
Mix Milk and Vinegar:In another bowl, mix the milk and vinegar, then add the vanilla extract. Pour this mixture into the batter and mix until fully incorporated.
1 tsp white vinegar, 1 tsp vanilla extract, 1 cup whole milk
Bake the Pudding:Pour the batter into the prepared pan and bake for 30 minutes, or until the top turns brown and a toothpick inserted in the center comes out clean.
Prepare the Butter Sauce:While the pudding bakes, combine the evaporated milk, sugar, and butter in a saucepan. Simmer over medium heat, stirring continuously, until the butter and sugar completely melt.
1 tbsp unsalted butter, ½ cup sugar, 1 cup evaporated milk
Add Sauce to Pudding:As soon as the pudding comes out of the oven, pour the warm butter sauce over it, ensuring the pudding absorbs the liquid. Let it stand for about 10 minutes to soak in the sauce.
Serve:Serve the pudding warm, either on its own or with whipped cream or ice cream for extra indulgence.

You can adjust the sugar amount in the pudding to suit your taste.
Pour the warm sauce over the pudding immediately after it comes out of the oven for optimal absorption.
