  • Prepare the Vegetables:
    Dice the onion and celery, and chop the carrot. Set them aside.
  • Sauté the Aromatics:
    Heat the olive oil in a large pot over medium heat. Add the diced onion, celery, and carrot, and sauté for about 5 minutes until softened.
  • Add Spices and Garlic:
    Stir in the minced garlic, salt, ginger, turmeric, paprika, black pepper, cinnamon, and cumin. Cook for another minute to release the flavors of the spices.
  • Add Lentils and Water:
    Add the washed lentils to the pot and stir to coat them in the spices and vegetables. Pour in enough water to cover the lentils by about an inch.
  • Simmer the Soup:
    Bring the soup to a boil, then reduce the heat to low and cover the pot. Let the soup simmer for about 30-40 minutes, or until the lentils are tender.
  • Adjust Seasoning and Serve:
    Taste the soup and adjust seasoning if needed. Serve hot, garnished with fresh herbs or a drizzle of olive oil if desired.
