Moroccan Lentil Soup
A flavorful, vegetarian and vegan-friendly Moroccan Lentil Soup, packed with spices and hearty vegetables. This healthy, warming soup is easy to make and perfect for a cozy meal.

- 1/2 pound dry lentils washed
- 1/2 medium onion diced
- 1 celery stalk diced (equal to the onion)
- 1 medium carrot chopped
- 1 tsp salt
- 1 tsp ground ginger
- 1 tsp ground turmeric
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cumin
- 2 tbsp olive oil
- 1 garlic clove minced
Instructions
- Prepare the Vegetables:Dice the onion and celery, and chop the carrot. Set them aside.
- Sauté the Aromatics:Heat the olive oil in a large pot over medium heat. Add the diced onion, celery, and carrot, and sauté for about 5 minutes until softened.
- Add Spices and Garlic:Stir in the minced garlic, salt, ginger, turmeric, paprika, black pepper, cinnamon, and cumin. Cook for another minute to release the flavors of the spices.
- Add Lentils and Water:Add the washed lentils to the pot and stir to coat them in the spices and vegetables. Pour in enough water to cover the lentils by about an inch.
- Simmer the Soup:Bring the soup to a boil, then reduce the heat to low and cover the pot. Let the soup simmer for about 30-40 minutes, or until the lentils are tender.
- Adjust Seasoning and Serve:Taste the soup and adjust seasoning if needed. Serve hot, garnished with fresh herbs or a drizzle of olive oil if desired.
