
Beef Couscous Recipe
Moroccan-Inspired Beef Couscous Recipe. A flavorful North African-inspired dish featuring tender beef stewed with aromatic spices, vegetables, and dried fruit, served over fluffy, quick-cooking couscous. This recipe balances savory meat with sweet and tangy accents for a rich and satisfying meal.

Ingredients
- 1 cup Couscous
- 2 tsp Olive Oil
- 2 cup Beef Broth
- 1 medium Onion
- 2 medium Carrot
- 3 cloves Garlic
- 425 grams Canned Chickpeas
- 1 lb ground beef
- 1/2 cup Dried Apricots
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Turmeric
- 1 tsp Salt
- 1 tsp Black Pepper
- 1/2 cup Fresh Parsley
- 1/2 cup red bell pepper
- 1/2 cup green bell pepper
- 2 tsp Slivered Almonds
- 1 tsp Lemon Juice
- 1 cup water
Instructions
- Step 1: Sear the Beef
- Start with the1 lb ground beef. Season the beef generously with salt and black pepper.1 tsp Salt, 1 tsp Black Pepper, 1 lb ground beef
- Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.2 tsp Olive Oil
- Add the seasoned beef to the hot oil, ensuring not to overcrowd the pot (cook in batches if necessary). Sear the beef until it is nicely browned on all sides. This usually takes about 3-4 minutes per batch. Then add ground beef Let it cook for 5 minute
- Remove the browned beef with a slotted spoon and set it aside.
- Step 2: Sauté Aromatics and Spices
- Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the pot.2 tsp Olive Oil
- Add 1 medium chopped onion and 2 medium sliced carrots. Sauté for 5-7 minutes until the onions are translucent and the carrots are slightly softened.1 medium Onion, 2 medium Carrot
- Add 3 minced garlic cloves, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of ground cinnamon, and 1/2 teaspoon of turmeric. Cook, stirring constantly, for about 1 minute until the spices are fragrant.3 cloves Garlic, 1 tsp Ground Cumin, 1 tsp Ground Coriander, 1/2 tsp Ground Cinnamon, 1/2 tsp Turmeric
- Step 3: Simmer the Stew
- Return the seared beef and any accumulated juices to the pot.
- Pour in 2 cups of beef broth.2 cup Beef Broth
- Stir in the drained and rinsed 1 can of chickpeas and 1/2 cup of chopped dried apricots.1/2 cup Dried Apricots, 425 grams Canned Chickpeas
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the beef is tender.
- Step 4: Prepare the Couscous
- While the stew is simmering, prepare the 1 cup of couscous.1 cup Couscous
- In a medium saucepan, bring 1 cup of water (or according to your package instructions) and a pinch of salt to a boil.1 cup water, 1 tsp Salt
- Remove the saucepan from the heat, stir in the couscous, cover tightly with a lid, and let it stand for 5-7 minutes, or until all the liquid is absorbed.
- Fluff the cooked couscous with a fork.
- Step 5: Finish and Serve
- Once the stew is cooked, remove the lid and stir in 1 tablespoon of fresh lemon juice. Taste the stew and adjust salt and pepper as needed.1 tsp Lemon Juice
- Stir in 1/4 cup of chopped fresh parsley, red bell pepper and green bell pepper1/2 cup red bell pepper, 1/2 cup green bell pepper, 1/2 cup Fresh Parsley
- To serve, spoon the fluffy couscous into a bowl and ladle a generous portion of the Moroccan Beef Stew over the top.
- Garnish each serving with a sprinkle of toasted 2 tablespoons of slivered almonds (optional) and extra fresh parsley.2 tsp Slivered Almonds
Notes
- For a richer flavour: Use a tough cut of beef (like chuck) and increase the simmering time to 1.5 - 2 hours, or until the beef is extremely tender. You may need to add more broth/water as it cooks down.
- Vegetable Variations: Feel free to add other vegetables common in North African cuisine, such as diced pumpkin, sweet potato, zucchini, or turnips. Add them in step 3, adjusting cook time to ensure they are tender.
- Spice Level: Add a pinch of cayenne pepper or a small, chopped chilli to the stew along with the other spices if you prefer a bit of heat.
