Nigerian Cheesy Yam Balls
Cheesy Yam Balls are a delicious appetizer made from mashed yam and cheese, inspired by the classic croquette. These crispy golden balls have a soft, cheesy center that’s perfect for impressing guests at holiday events or special gatherings. With a hint of suya spice for a Nigerian twist, these yam balls are flavorful and super easy to make.

- 2 eggs
- 1-2 seasoning cubes to taste
- 1 tablespoon suya spice
- 1 teaspoon black pepper
- 1 sprig parsley optional, finely chopped

- Prepare the Coating:In a separate bowl, mix the breadcrumbs with suya spice and set aside.Whisk the eggs in another bowl and set aside.
- Form the Yam Balls:Scoop a small amount of the mashed yam into your hand and flatten it. Place a piece of cheddar cheese in the center and wrap the yam around it to form a ball.Repeat this process until all the yam mixture is used.
- Coat the Yam Balls:Dip each yam ball into the whisked eggs, then roll it in the seasoned breadcrumbs, making sure it is evenly coated.
