Ingredients
- 4 tbsp oil
- 1 tbsp butter
- 14.5 oz canned unsalted tomato sauce
- 2 red bell peppers
- 6 oz canned tomato paste
- 3 red onions for blending
- 1 red onion chopped, for frying
- 2 tbsp blended or ground crayfish
- 3 scotch bonnet or habanero peppers seeded, adjust for spice level
- 4 ½ cups rice
- 2 cups chicken stock
- 2 stock cubes
- 1 tbsp salt
- ½ tsp cayenne pepper
- ½ tsp white pepper
- 3 bay leaves
- ½ tbsp curry powder
- ½ tsp garlic powder
- ½ tsp thyme
- ¼ tsp ginger powder
Instructions
- Blend the Vegetables:In a blender, combine tomatoes, red bell peppers, habanero peppers, and the 3 large red onions. Blend until smooth and set aside.
- Wash the Rice:Thoroughly rinse the rice to remove excess starch, then set aside.
- Sauté the Onions:Heat oil and butter in a medium-sized pot over medium heat. Add the chopped red onion and sauté for about 5 minutes, until the onions begin to soften and lose their color.
- Cook the Tomato Paste:Add tomato paste to the pot and fry for 10-15 minutes, stirring continuously to prevent burning.
- Add Blended Mixture and Spices:Pour the blended pepper and onion mixture into the pot. Add crayfish, stock cubes, cayenne pepper, white pepper, bay leaves, curry powder, garlic powder, thyme, and ginger powder. Stir and fry the mixture for about 30 minutes, stirring occasionally to prevent sticking.
- Add Chicken Stock:Pour in the chicken stock and salt, stir well, and cook for another 10 minutes.
- Add Rice:Stir in the washed rice and add extra water if needed to ensure the rice is fully covered. Reduce the heat to low.
- Cook the Rice:Cover the pot with aluminum foil to seal in moisture and heat, then place the lid on top. Let the rice cook on low heat for about 30 minutes.
- Stir and Continue Cooking:Once the rice is cooked, stir it thoroughly and cover the pot again, allowing the rice to steam for an additional 10 minutes.
- Create 'Party' Flavor:For the authentic 'party' Jollof flavor, increase the heat for about 3 minutes to allow the bottom layer of rice to slightly crisp. Be careful to avoid burning the entire pot.
Notes
- Adjust Spice: Add more or fewer scotch bonnet peppers depending on your heat preference.
- Flavor Tip: The slight crisp at the bottom of the pot adds an authentic, smoky flavor to the rice, similar to party-style Jollof.
