  • 5 pcs fresh ginger
  • 3 small onions
  • 2 scotch bonnet peppers
  • 1 seasoning cube (optional)
  • ½ cup water (for blending, if needed)

For Frying:

  • Sunflower oil (or any preferred frying oil)

Instructions
 

  • Prepare the Spice Blend:
    Peel, wash, and chop the onions, ginger, and scotch bonnet peppers into small pieces.
    Place the chopped ingredients into a grinder or blender. Add the seasoning cube and a bit of water if using a blender. Grind or blend until smooth.
  • Mash the Plantains:
    Peel and cut the overripe plantains into small chunks.
    Mash the plantain pieces in a large bowl until smooth.
  • Combine Ingredients:
    Add the curry powder, Aromat seasoning, and grated nutmeg to the mashed plantains.
    Pour in the prepared spice blend and mix everything thoroughly until well combined.
  • Add Flour:
    Gradually add the plain flour to the plantain mixture. Mix well until the batter has a thick consistency that holds together when scooped.
  • Preheat Oil:
    Heat the oil in a deep pan over medium heat. Test the oil’s readiness by dropping a small bit of the batter into it. The oil should sizzle around the edges.
  • Form and Fry the Fritters:
    Using your hands or a spoon, scoop small portions of the plantain mixture and form them into rough ball shapes.
    Gently drop each ball into the hot oil. Fry in batches to avoid overcrowding.
    Fry for 3-4 minutes, then turn the fritters over to ensure even cooking. Continue frying, turning occasionally, until golden brown.
  • Drain and Serve:
    Once the fritters are golden brown, remove them from the oil and drain on a paper towel.
    Serve warm as a snack or side dish.
