Ingredients
For the Plantain Dough:
- 3 medium-sized ripe plantains
- Salt to taste
- Water, for boiling
For the Filling:
- 200 g beef or minced meat
- ½ small onion, diced
- 1 tsp chili powder
- 1 seasoning cube
- Salt , to taste
- 2 tbsp vegetable oil (for stir-frying)
For Frying:
- 3 cups vegetable oil for deep frying
Instructions
- Prepare the Filling:If you are starting with whole beef, wash the meat thoroughly and trim off any tough parts. Dice into smaller chunks and grind using a mincer or food processor.In a pot, steam the minced meat with 1 cup of water and a pinch of salt for about 10 minutes.Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add the diced onion and sauté for 2 minutes until translucent.Add the steamed minced meat, chili powder, crushed seasoning cube, and a sprinkle of salt. Stir-fry for 5 minutes. Remove from heat and set aside to cool.
- Prepare the Plantain Dough:Wash and cut the plantains into three pieces each. Place them in a pot, add water, and boil for 15 minutes or until soft.Peel the boiled plantains and mash them thoroughly using a fork until smooth.On a flat surface, roll out the mashed plantain using a rolling pin to about ¼-inch thickness. Use a circle cutter to cut out circles from the rolled plantain.
- Assemble the Empanadas:Place 1 tablespoon of the prepared minced meat filling in the center of each plantain circle.Fold each circle over to form a half-moon shape and press the edges together to seal.
- Fry the Empanadas:Preheat the vegetable oil in a pan over medium heat.Carefully drop the empanadas into the hot oil, one at a time, making sure not to overcrowd the pan.Fry until golden brown on both sides, about 3-4 minutes per side.Remove the empanadas from the oil and drain on a paper towel to remove excess oil.
- Serve:Serve the plantain empanadas warm, with a side of hot pepper sauce or ata din din if desired.
