  • 5 cups Water

  • Wash the rice thoroughly and soak it in water for about 30 minutes. Drain the soaked rice.
    In a large pot, bring 4-5 cups of water to a boil.

Cook the Rice:

  • Add the soaked rice to the boiling water
    Cover the pot and cook on medium heat until the rice becomes very soft and mushy, stirring occasionally to prevent it from sticking to the bottom.

Mash the Rice:

  • Once the rice is fully cooked and mushy, use a cooking spoon or wooden spatula to stir and mash the rice vigorously. This step is similar to making fufu; keep stirring until the rice breaks down and forms a smooth, dough-like consistency.

Steam and Shape the Tuwon Shinkafa:

  • Cover the pot and let the mixture steam on low heat for another 5 minutes to ensure it is fully cooked and has a smooth texture.
    Stir the mixture again, then remove it from the heat.

Serve:

  • Portion the Tuwon Shinkafa into balls or desired shapes using cling film or plastic wrap.
