African Vibes Recipes
Tuwon Shinkafa, also known as Rice Swallow, is a popular Nigerian dish made from soft, mushy rice that is stirred into a smooth, dough-like consistency. Traditionally served with soups like Miyan Taushe (pumpkin soup) or Miyan Kuka (baobab leaf soup), it’s a staple in Hausa cuisine, offering a comforting, starchy base for rich and flavorful stews.

Equipment

Ingredients

  • 2 cups white rice (short-grain or medium-grain)
  • 5 cups Water

Instructions

Prepare the Rice:

  • Wash the rice thoroughly and soak it in water for about 30 minutes. Drain the soaked rice.
In a large pot, bring 4-5 cups of water to a boil.

Cook the Rice:

  • Add the soaked rice to the boiling water
Cover the pot and cook on medium heat until the rice becomes very soft and mushy, stirring occasionally to prevent it from sticking to the bottom.

Mash the Rice:

  • Once the rice is fully cooked and mushy, use a cooking spoon or wooden spatula to stir and mash the rice vigorously. This step is similar to making fufu; keep stirring until the rice breaks down and forms a smooth, dough-like consistency.

Steam and Shape the Tuwon Shinkafa:

  • Cover the pot and let the mixture steam on low heat for another 5 minutes to ensure it is fully cooked and has a smooth texture.
Stir the mixture again, then remove it from the heat.

Serve:

  • Portion the Tuwon Shinkafa into balls or desired shapes using cling film or plastic wrap.
Serve warm with your favorite soup, such as Miyan Taushe, Miyan Kuka, or fresh okra soup.

Notes

Recipe Tips:

  • Rice Selection: Short-grain or medium-grain rice works best for this recipe because it becomes sticky when cooked.
  • Consistency: Stirring vigorously is key to achieving the smooth, stretchy texture characteristic of Tuwon Shinkafa.
  • Serving: Pair with rich, hearty Nigerian soups like peanut soup (Miyan Taushe) for a traditional meal.
