Equipment
- Large Bowl for marinating
- Oven with grill function
- Grater (for garlic)
Ingredients
- 1 kg fresh goat meat cut into small cubes
- 2 medium-sized tomatoes diced
- 2 medium-sized onions diced
- 2 cloves garlic minced
- 2 tablespoons vegetable oil or olive oil
- 1 medium-sized carrot diced
- 1 green pepper diced
- 1 tablespoon concentrated lemon juice
- 1 teaspoon thyme
- Salt to taste
- Chilli peppers optional, for extra heat
Instructions
- Prepare the Meat: Start by cleaning the goat meat and cutting it into small, bite-sized pieces. Place the meat in a large bowl.
- Marinate: Sprinkle the goat meat with salt, lemon juice, and cooking oil. Add the diced tomatoes and carrots. Mix everything well to coat the meat evenly.
- Preheat the Oven: Set your oven to the grill function and preheat it to 230°C (450°F).
- Grill the Meat: Place the marinated goat meat on a baking tray and grill in the oven for 35 minutes.
- Add the Vegetables: After 35 minutes, remove the tray from the oven and add the diced green pepper, onions, garlic, and optional chili peppers to the meat. Stir to combine.
- Final Grilling: Put the tray back into the oven and grill for an additional 5 minutes to allow the vegetables to soften and the meat to brown nicely.
- Serve: Once done, remove from the oven and serve hot with rice, nshima, or your preferred side dish. Enjoy!
Notes
- Lemon Juice: The lemon juice adds a tangy flavor and helps tenderize the meat.
- Vegetables: Feel free to add or substitute vegetables based on your preference, such as zucchini or bell peppers.
- Spice: If you enjoy spicy food, add extra chili peppers or a dash of cayenne to the marinade.
