  • 1 kg fresh goat meat cut into small cubes
  • 2 medium-sized tomatoes diced
  • 2 medium-sized onions diced
  • 2 cloves garlic minced
  • 2 tablespoons vegetable oil or olive oil
  • 1 medium-sized carrot diced
  • 1 green pepper diced
  • 1 tablespoon concentrated lemon juice
  • 1 teaspoon thyme
  • Salt to taste
  • Chilli peppers optional, for extra heat

Instructions
 

  • Prepare the Meat:
    Start by cleaning the goat meat and cutting it into small, bite-sized pieces. Place the meat in a large bowl.
  • Marinate:
    Sprinkle the goat meat with salt, lemon juice, and cooking oil. Add the diced tomatoes and carrots. Mix everything well to coat the meat evenly.
  • Preheat the Oven:
    Set your oven to the grill function and preheat it to 230°C (450°F).
  • Grill the Meat:
    Place the marinated goat meat on a baking tray and grill in the oven for 35 minutes.
  • Add the Vegetables:
    After 35 minutes, remove the tray from the oven and add the diced green pepper, onions, garlic, and optional chili peppers to the meat. Stir to combine.
  • Final Grilling:
    Put the tray back into the oven and grill for an additional 5 minutes to allow the vegetables to soften and the meat to brown nicely.
  • Serve:
    Once done, remove from the oven and serve hot with rice, nshima, or your preferred side dish. Enjoy!

  • Lemon Juice: The lemon juice adds a tangy flavor and helps tenderize the meat.
  • Vegetables: Feel free to add or substitute vegetables based on your preference, such as zucchini or bell peppers.
