
South African Style Rice
This refreshing and colorful South African-inspired rice salad is packed with vibrant vegetables, sweet raisins, and a creamy yogurt-mayo dressing. Perfect as a light side dish or a picnic favorite!

Ingredients
- 250 grams cooked rice
- Salt to taste
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 small onion finely chopped
- 50 grams raisins soaked in warm water
- 100 grams yogurt 0.1% fat
- 100 grams mayonnaise
- Fresh lemon balm leaves for garnish
- Freshly ground black pepper to taste
Instructions
- Cook the rice: Boil the rice in salted water for about 20 minutes until al dente. Drain and set aside to cool.
- Prepare the vegetables: Rinse and dice the red and green bell peppers, removing the seeds and ribs. Peel and finely chop the onion. Soak the raisins in warm water for a few minutes, then drain.
- Combine ingredients: In a large mixing bowl, combine the cooked rice, bell peppers, onion, and raisins. Mix well.
- Make the dressing: In a small bowl, whisk together the yogurt and mayonnaise. Season lightly with salt and freshly ground black pepper to taste.
- Assemble the salad: Pour the yogurt-mayo dressing over the rice mixture and toss until everything is well coated.
- Serve: Rinse the lemon balm leaves, pat them dry, and pluck small leaves for garnish. Serve the salad topped with the lemon balm for a refreshing finish.
