  • 1 pound chicken breast
  • 2 tablespoons Essiespice Mekko Dry Rub or substitute, see Notes
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped parsley
  • 1 cup sliced bell peppers
  • 3 cups mixed greens
  • 4 bamboo skewers

Instructions
 

  • Prepare the Skewers:
    Soak bamboo skewers in water for at least 10 minutes to prevent burning during cooking.
  • Prep the Chicken:
    Rinse the chicken under cold water and pat dry with a kitchen towel. Cut the chicken into 1-inch cubes.
  • Marinate the Chicken:
    In a medium bowl, combine the Essiespice Mekko Dry Rub, parsley, and olive oil. Add the chicken cubes, mix well to coat evenly, and marinate for about 45 minutes.
  • Preheat the Grill:
    Heat a stovetop grill pan over medium-high heat. Drizzle a little olive oil onto the grill surface to prevent sticking.
  • Assemble the Skewers:
    Thread 4 chicken cubes onto each bamboo skewer.
  • Grill the Chicken:
    Place the chicken skewers on the preheated grill. Cook for 5-6 minutes on each side until the chicken is fully cooked and has grill marks.
  • Prepare the Salad:
    In a large bowl, toss the mixed greens and sliced bell peppers with your favorite vinaigrette, such as a serrano honey vinaigrette.
  • Serve:
    Transfer the salad to serving bowls and top each salad with the grilled chicken skewers. Enjoy!

Notes

  • Dry Rub Substitute: If you don’t have Essiespice Mekko Dry Rub, you can make a homemade blend using powdered roasted peanuts, ginger, garlic, onion, chili pepper, salt, and olive oil for a similar flavor profile.
