Ingredients
- 4 cups Basmati rice recommended brands: Island Sun Sella Basmati, Asli Basmati, Lal Qilla
- 2 cooking spoons vegetable oil
- 4-5 cups chicken stock
- 3 cups mixed vegetables green peas, runner beans, green pepper, sweetcorn, carrot
- 1 large onion chopped
- 1-2 cups cooked shrimp/prawns
- 1 cup liver cooked and diced
- 1 cup chopped spring onions
- 4 Knorr chicken cubes
- 1 tablespoon curry powder
- 1 tablespoon dried thyme
- Salt to taste
Instructions
- Fry the Rice:Heat 2 cooking spoons of vegetable oil in a large pot over medium heat.Add the washed basmati rice and stir-fry for about 2-3 minutes, stirring occasionally to prevent burning.
- Cook the Rice:Pour in 4-5 cups of chicken stock, just enough to cover the rice. If you don't have enough chicken stock, you can top it up with water.Add the chopped onions, curry powder, thyme, Knorr chicken cubes, and salt. Be cautious when adding salt, as the chicken stock already contains salt.Cover the pot tightly, allowing the rice to cook by trapping the heat. Optionally, place foil over the pot before covering with the lid for more trapped heat.
- Add Vegetables and Liver:Once the rice is tender but not fully cooked, add the mixed vegetables (green peas, runner beans, green pepper, sweetcorn, and carrots) and diced liver.Stir the mixture well to combine the ingredients, and taste for seasoning. Adjust if necessary.
- Finish Cooking:Add the chopped spring onions, stir to combine, and cover the pot again, allowing the rice to cook until soft.Finally, add the cooked shrimp/prawns, cover the pot, and cook for another 2 minutes.
- Steam and Serve:Turn off the heat and allow the rice to steam for about 3 minutes with the residual heat.Serve hot and enjoy your Nigerian Basmati Fried Rice!
