  • 4 pounds stewing lamb or mutton cut into bite-sized pieces
  • 4 onions sliced
  • 1 chili pepper finely chopped (seeded if desired)
  • 1 cup water
  • 6 cups diced raw pumpkin
  • 1 pinch ground cinnamon
  • 1 pinch ground nutmeg
  • 1 teaspoon sugar
  • 1 bay leaf
  • 1 piece 2-inch orange peel
  • Salt and pepper to taste

Instructions
 

  • Brown the Lamb:
    Heat the oil in a deep skillet over medium-high heat. Add the lamb pieces and cook, stirring frequently, until evenly browned. Remove the lamb from the skillet and set aside.
  • Cook the Aromatics:
    In the same skillet, add the sliced onions and chopped chili pepper. Cook, stirring occasionally, until the onions become soft and translucent.
  • Combine Ingredients:
    Return the browned lamb to the skillet. Stir in the water, diced pumpkin, cinnamon, nutmeg, sugar, bay leaf, orange peel, salt, and pepper. Mix everything well.
  • Simmer the Stew:
    Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cover and cook for about 1 hour, or until the lamb is tender. If using mutton, allow it to cook for 2-3 hours, or until tender.
  • Serve:
    Remove the bay leaf and orange peel before serving. Enjoy the stew hot with a side of rice or your favorite grain.
