Filling

  • 2 tbsp tablespoons oil
  • 1/2 medium onion , chopped
  • 2 tsp minced garlic
  • 1 tbsp ginger , grated
  • 1 tsp pepper sauce or chili sauce
  • 1 tsp curry powder
  • ½ tsp cayenne pepper
  • ½ tsp smoked paprika
  • 1 tsp white pepper
  • 1/2 lb ground meat chicken, beef or turkey
  • 3 tbsp parsley or cilantro
  • 1/3 cup frozen peas , thawed
  • salt to taste

Instructions
 

For the Filling:

  • In a skillet, heat oil over medium heat. Add chopped onions, garlic, and ginger. Sauté for 2-3 minutes.
  • Stir in curry powder, pepper sauce, paprika, white pepper, and cayenne. Cook for about 2 minutes.
  • Add the ground meat and cook until browned and fully cooked, about 5 minutes.
  • Mix in the peas, parsley, and salt to taste. Stir well and cook for an additional 2 minutes. Remove from heat and let the filling cool.

For the Dough:

  • In a large bowl, combine flour, sugar, and salt.
  • Create a well in the center and add ghee or oil, and warm water. Mix until a soft dough forms.
  • Knead the dough on a floured surface for 3-4 minutes until smooth and elastic. Let the dough rest for 10 minutes.

To Assemble the Samosas:

  • Divide the dough into eight balls. Roll each ball into a circle, then cut it in half.
  • Spoon 1-2 tablespoons of the filling onto the center of each half-circle. Fold the dough into a triangle and seal the edges with water or flour paste.
  • Repeat with the remaining dough and filling.

For Frying:

  • Heat vegetable oil in a deep saucepan until it reaches 350°F (180°C).
  • Fry the samosas in batches, turning until golden brown on both sides, about 2-3 minutes per side.
  • Remove with a slotted spoon and drain on paper towels. Serve hot.

For Baking:

  • Preheat the oven to 375°F (190°C). Place the samosas on a baking sheet and brush them with oil.
  • Bake for 20-25 minutes, flipping halfway, until golden brown.
  • Servings: Makes 16 samosas (8 servings)

Notes

  • For a quicker version, use store-bought filo or phyllo dough.
  • Be careful not to overcrowd the pan while frying to avoid uneven cooking.
  • Samosas can be frozen and reheated by baking them at 375°F for 10-15 minutes.
