Crispy Chicken Samosas
These crispy and savory chicken samosas, filled with spiced ground chicken and peas, offer an irresistible treat. Whether baked or fried, these samosas are a flavorful fusion of African and Indian cuisine, perfect for appetizers or snacks.

Ingredients
- 3 cups all-purpose flour , plus more as needed
- 1 tbsp granulated sugar
- 1 1/2 tsp salt
- 1/2 cup ghee (clarified butter)
- 1 cup warm water
Filling
- 2 tbsp tablespoons oil
- 1/2 medium onion , chopped
- 2 tsp minced garlic
- 1 tbsp ginger , grated
- 1 tsp pepper sauce or chili sauce
- 1 tsp curry powder
- ½ tsp cayenne pepper
- ½ tsp smoked paprika
- 1 tsp white pepper
- 1/2 lb ground meat chicken, beef or turkey
- 3 tbsp parsley or cilantro
- 1/3 cup frozen peas , thawed
- salt to taste
Instructions
For the Filling:
- In a skillet, heat oil over medium heat. Add chopped onions, garlic, and ginger. Sauté for 2-3 minutes.
- Stir in curry powder, pepper sauce, paprika, white pepper, and cayenne. Cook for about 2 minutes.
- Add the ground meat and cook until browned and fully cooked, about 5 minutes.
- Mix in the peas, parsley, and salt to taste. Stir well and cook for an additional 2 minutes. Remove from heat and let the filling cool.
For the Dough:
- In a large bowl, combine flour, sugar, and salt.
- Create a well in the center and add ghee or oil, and warm water. Mix until a soft dough forms.
- Knead the dough on a floured surface for 3-4 minutes until smooth and elastic. Let the dough rest for 10 minutes.
To Assemble the Samosas:
- Divide the dough into eight balls. Roll each ball into a circle, then cut it in half.
- Spoon 1-2 tablespoons of the filling onto the center of each half-circle. Fold the dough into a triangle and seal the edges with water or flour paste.
- Repeat with the remaining dough and filling.
For Frying:
- Heat vegetable oil in a deep saucepan until it reaches 350°F (180°C).
- Fry the samosas in batches, turning until golden brown on both sides, about 2-3 minutes per side.
- Remove with a slotted spoon and drain on paper towels. Serve hot.
For Baking:
- Preheat the oven to 375°F (190°C). Place the samosas on a baking sheet and brush them with oil.
- Bake for 20-25 minutes, flipping halfway, until golden brown.
- Servings: Makes 16 samosas (8 servings)
Notes
- For a quicker version, use store-bought filo or phyllo dough.
- Be careful not to overcrowd the pan while frying to avoid uneven cooking.
- Samosas can be frozen and reheated by baking them at 375°F for 10-15 minutes.
