Plantain Fufu
Plantain Fufu is a simple and healthy alternative to traditional high-carb fufu varieties. Made with just two ingredients—green plantains and water—it is smooth, stretchy, and pairs perfectly with a variety of African soups and stews like egusi, okra, or efo riro.

Ingredients
- 2 Plantains green peeled and chopped
- ½ to ¾ Cup water
Instructions
- Prepare the Plantains:Peel the plantains and cut them into small pieces for easy blending.
- Blend the Plantains:Add the chopped plantains to a blender along with 1/2 cup of water. Blend until smooth, making sure there are no chunks.
- Cook the Fufu:Pour the smooth plantain batter into a pot over medium heat. Stir constantly as it begins to cook and thicken.Continue stirring vigorously until the batter forms a stretchy, dough-like consistency. If you notice lumps forming, reduce the heat slightly and stir more vigorously until smooth.
- Adjust Consistency:If the fufu feels too thick, you can add a little more water while cooking to soften it. Keep in mind that it will firm up slightly as it cools.
- Finish and Serve:Once the fufu is cooked (about 10-15 minutes), remove from heat. Wrap it in plastic wrap to prevent a crust from forming and let it cool for a few minutes before serving.

- Prevent Lumps: Stir thoroughly throughout the cooking process to prevent lumps from forming.
- Wrapping: Once cooked, wrap the fufu in plastic wrap to maintain moisture and prevent it from forming a crust while it cools.
- Serving Suggestions: Pair plantain fufu with your favorite African soups or stews, such as egusi, okra, or efo riro, for a traditional meal.
