Nigerian Pancakes, also known as Diet Pancakes, are a savory and slightly sweet breakfast treat enriched with vegetables like carrots, peppers, and onions. This delicious pancake recipe is perfect for breakfast or as a snack, with a balance of flavor and texture that’s sure to please.
Ingredients
- 2 cups all-purpose flour sifted
- 1/2 tsp grated nutmeg
- 1 tsp baking powder
- 3 tbsp powdered milk
- 1/2 tsp salt
- 3 tbsp granulated sugar
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup grated carrot
- 1/4 cup chopped onions
- 2 large eggs
- 475-500 ml lukewarm water
- Vegetable oil for frying
Instructions
- Prepare the Dry Ingredients:In a large bowl, mix the sifted all-purpose flour, baking powder, powdered milk, salt, sugar, and grated nutmeg. Stir the dry ingredients well and set aside.
- Chop the Vegetables:Peel and finely chop the green and red bell peppers, carrots, and onions. Set them aside.
- Prepare the Wet Mixture:In another bowl, crack the eggs and whisk them.Add the chopped vegetables to the eggs and mix well.Gradually add the lukewarm water to the mixture, ensuring everything is well combined.
- Combine Wet and Dry Ingredients:Slowly add the dry flour mixture to the wet vegetable mixture, stirring constantly to avoid lumps.Continue to add the flour mixture a little at a time until it is fully incorporated. If the batter is too thick, add a little more water to achieve the desired pancake consistency.
- Fry the Pancakes:Grease a non-stick frying pan with vegetable oil and place it over medium heat.Pour a portion of the pancake batter into the pan and let it spread evenly.Cook until the top of the pancake begins to set, then flip it to cook the other side.Continue cooking until both sides are golden brown. Repeat with the remaining batter.
- Serve:Once all pancakes are cooked, serve them hot as a delicious breakfast or snack.
