Nigerian Eba
Eba is a staple Nigerian side dish made from garri (cassava flour) and boiling water. It's quick and easy to prepare and is traditionally served with Nigerian soups. Eba can be made using different methods, including the stovetop, in a bowl, or even in the microwave.
Equipment
- Saucepan (for stovetop method)
- wooden spatula or sturdy spoon
- Microwaveable bowl (for microwave method)
Ingredients
- 1 cup boiling hot water or as needed
- 1/3 cup garri adjust to achieve desired texture
Instructions
Stovetop Method:
- Boil Water:Bring water to a boil in a kettle.Place a small saucepan on medium heat and carefully pour 1 cup of the hot boiling water into the saucepan.
- Add Garri:Stir in 1/3 cup of garri into the hot water using a wooden spatula.If the eba is too soft, sprinkle more garri until you achieve the desired texture.
- Serve:Once the eba is ready, mold it into a desired shape and serve immediately with your favorite Nigerian soup.
Bowl Method:
- Boil Water:Heat water to a rolling boil.
- Combine Ingredients:Add the hot water to a bowl and evenly sprinkle in the garri.Stir the mixture together using a wooden spatula or spoon until the eba forms. Adjust the texture by adding more garri if it's too soft or more water if it's too firm.
- Serve:Mold the eba and serve immediately with your soup of choice.
Microwave Method:
- Prepare Ingredients:Add the garri to a microwaveable bowl and cover with cold water (level with the garri).
- Microwave:Microwave on high for 2 minutes. Take the bowl out and stir the mixture together until smooth.
- Serve:Mold the eba and serve immediately with Nigerian soup.

- Garri Types: Different types of garri absorb water differently. You can use garri ijebu, yellow garri, or white garri, depending on your preference.
- Adjust Portions: Double the recipe to suit your needs.
