Ingredients
- 12 pieces of chicken legs and drumsticks
- 2 tablespoons cane sugar
- 1 teaspoon paprika
- 2 tablespoons fresh thyme finely chopped
- 3 teaspoons ground ginger
- 3 teaspoons ground coriander
- 3 teaspoons ground cloves
- 3 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 3 teaspoons ground chili powder
- 2 teaspoons granulated garlic
- 1 tablespoon salt
- 2 tablespoons extra virgin olive oil
Instructions
- Prepare the Marinade: In a large bowl, combine the cane sugar, paprika, thyme, ginger, coriander, cloves, cinnamon, nutmeg, chili powder, garlic, and salt. Add the olive oil and stir until well mixed.
- Marinate the Chicken: Pat the chicken dry with a paper towel. Rub the spice mixture evenly over each piece of chicken, ensuring the seasoning gets under the skin as well. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to let the flavors develop.
- Preheat the Oven: When ready to cook, preheat your oven to 375°F (190°C). If using a grill, preheat to medium heat.
- Bake or Grill the Chicken: Place the marinated chicken pieces on a lined baking tray or grill rack. Bake in the preheated oven for about 50-60 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Turn the chicken halfway through cooking for even browning. If grilling, cook for 45-60 minutes, flipping occasionally to ensure even cooking.
- Serve: Once cooked, remove the chicken from the oven or grill and let it rest for 5 minutes before serving. This dish pairs well with rice, salad, or roasted vegetables for a complete meal.
