Kachumbari is a refreshing and zesty tomato and onion salad from Kenya. This light and simple dish pairs beautifully with grilled meats, making it an ideal summer side.

Ingredients
- ½ medium red onion diced
- 1 tsp salt
- 2 large tomatoes diced
- ¾ avocado diced
- 1 small chili optional, finely chopped
- ½ lime juiced (approx 1 tbsp juice)
- 1 tbsp fresh cilantro chopped
Instructions
- Prepare the Onions:Place the diced red onion in a small bowl. Sprinkle with salt and massage the salt into the onion pieces.Cover the onions with water and let them stand for 10 minutes to soften and reduce their sharpness.
- Prepare the Vegetables:While the onions soak, dice the tomatoes, avocado, and chili (if using). Place the diced vegetables in a medium bowl.
- Combine Ingredients:Drain the onions and add them to the bowl with the tomatoes, avocado, and chili.Add the lime juice and fresh cilantro to the salad.
- Mix and Serve:Stir the salad gently to combine all the ingredients. Taste and adjust with more salt or lime juice if needed.Serve immediately.
Notes
- Onion Tip: Soaking the onions with salt helps mellow their sharp flavor. For a milder taste, let them soak longer if desired.
- Spice Level: The chili is optional and can be adjusted to your preferred level of heat.
