Nigerian Corn Moi-Moi pudding
Nigerian Corn Moi-Moi pudding
Steamed Corn Pudding, known as Corn Moi Moi, is a delightful and nutritious dish made from fresh corn, overripe plantain, peppers, and seasonings. This savory pudding is a delicious twist on the traditional Nigerian Moi Moi, using corn instead of beans. It’s perfect as a side dish or a light meal.
Equipment
- Moi Moi Plates, Banana Leaves, or Foil
Ingredients
- 3 fresh ears corn (kernels removed)
- 1 overripe plantain
- 1 small onion
- 1 large red bell pepper (tatashe)
- 1 scotch bonnet pepper (optional, for heat)
- ½ cup water (for blending)
- 2 tbsp vegetable oil (or palm oil)
- 2 tbsp ground crayfish
- 1 seasoning cube (bouillon)
- salt to taste
- Smoked fish (optional, or any protein of choice)
Instructions
Prepare the Ingredients:
- Remove the corn kernels from the cobs and discard the cobs (or save them for stock).Transfer the corn kernels to a blender.
Blend the Mixture:

Season the Mixture:
- Pour the blended corn mixture into a mixing bowl.Add the vegetable oil (or palm oil), ground crayfish, seasoning cube, and salt to taste.Stir the mixture thoroughly until all ingredients are well combined.Add the smoked fish or your protein of choice and mix gently.
Prepare for Steaming:
- Pour the mixture into Moi Moi plates, banana leaves, or foil.Seal them properly to avoid water entering during steaming.
Steam the Corn Pudding:
- Arrange the sealed Moi Moi plates or wrapped leaves in a steaming pot.Add a small amount of water to the pot—just enough to create steam but not to submerge the plates.Cover the pot and steam on medium heat for about 30 minutes.
Check for Doneness:
- After 30 minutes, check if the pudding has firmed up.If it’s firm, remove from heat. If not, steam for a few more minutes.
Serve:
- Allow to cool slightly, then serve warm as a side dish or a light main course.

Notes
Recipe Tips:
- Oil Choice: You can use palm oil for a richer, more traditional flavor.
- Texture: Ensure the mixture is smooth to achieve a creamy pudding texture.
- Protein: Smoked fish adds a deep flavor, but boiled eggs or minced meat work well too.
- Steaming: Avoid adding too much water; you want to steam, not boil the pudding.
