African Drop Doughnuts Recipe
This easy recipe for African drop doughnuts makes light, fluffy, and flavorful treats that can be made with simple ingredients from your kitchen. These doughnuts are popular across the African continent and are quick to prepare without any need for proofing, making them an ideal choice for breakfast, dessert, or a snack. They are not too sweet and are lightly scented with vanilla for an irresistible flavor.
Equipment
- Large Saucepan or deep fryer
- Paper Towels (for draining)
- Ice cream scoop or tablespoon (optional for shaping)
Ingredients
- 1000 grams All-purpose Flour
- 200 grams Sugar brown
- 2 Packs Packs Baking Powder
- 2 tsp Salt
- 750 ml Milk low fat
- 125 grams Melted Butter
- 4 medium Eggs
- 1 tsp Vanilla Extract
- 1 l Vegetable oil
Instructions
- Prepare Wet Ingredients: In a bowl, whisk the melted butter with cold milk and eggs until fully incorporated. Set aside.
- Prepare Dry Ingredients: In a large mixing bowl, combine the flour, sugar, salt, and baking powder. If using vanilla extract, add it to the wet ingredients instead of the dry mix.
- Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry mixture and gently mix until smooth. Be cautious not to overmix as this can result in a dense texture.
- Heat the Oil: In a large saucepan, heat vegetable oil over medium heat, filling it more than halfway to ensure enough depth for frying. Test the oil temperature by dropping a small amount of batter into the oil. If the batter floats to the surface quickly, the oil is ready.
- Form and Fry Doughnuts: Scoop small portions of the batter into your palm and squeeze them between your thumb and index finger to form doughnut shapes. Alternatively, use a spoon to drop the batter into the hot oil. Fry for about 2 minutes, turning the doughnuts regularly for even browning. Avoid overcrowding the pan.
- Drain Excess Oil: Once the doughnuts are golden brown, use a slotted spoon to remove them from the oil and drain them on paper towels.
- Serve: Serve the doughnuts hot or warm. You can dust them with powdered sugar or enjoy them plain.
Notes
- These doughnuts are best enjoyed hot or warm, and you can dust them with powdered sugar if desired.
- Avoid overmixing the batter to ensure a light, fluffy texture.
- You can add lemon zest, spices like cinnamon or nutmeg, or even mix in chocolate chips or berries for added flavor.
- Leftover doughnuts can be stored in an airtight container and warmed in the microwave before serving.
