Prepare the Chicken:

  • Wash the chicken under running water and pat dry with paper towels.
    In a small bowl, mix the salt and black pepper. Rub this mixture on both sides of the chicken thighs.

Brown the Chicken:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    Brown the chicken thighs on both sides, then remove and set aside.

Sauté the Vegetables:

  • In a large soup pot, heat the remaining olive oil over medium heat.
    Add the chopped onion and red bell pepper. Sauté for a few minutes until softened.

Cook the Stew Base:

  • Add the tomato sauce, cayenne pepper, and bouillon powder to the pot. Simmer for a few minutes.
    Pour in the chicken stock or water and stir well.

Simmer the Chicken:

  • Add the browned chicken thighs back into the pot.
    Stir and let the stew simmer for 10 minutes.

Finish with Peanut Butter:

  • Stir in the peanut butter until fully incorporated.
    Continue cooking until the stew thickens to your desired consistency.

Serve:

  • Taste for salt and adjust as needed. Serve the stew hot over rice, couscous, or with a side of vegetables.
