Yummy Maafe (West African Peanut Soup)
This African Chicken Peanut Stew is a rich, hearty, and flavorful dish. Combining tender chicken thighs, creamy peanut butter, and aromatic spices, this stew is a comforting meal perfect for any day.

Ingredients
- 1.5 lb chicken thighs
- 1/2 cup tomato sauce
- 1 bell pepper hopped
- 1/2 cup peanut butter
- 1/4 up olive oil
- 1/2 onion
- 1 tsp cayenne pepper
- 1 tsp bouillon powder
- 2 cups chicken stock or water
- 1 tsp black pepper
- 1 tsp salt to taste
Instructions
Prepare the Chicken:
- Wash the chicken under running water and pat dry with paper towels.In a small bowl, mix the salt and black pepper. Rub this mixture on both sides of the chicken thighs.
Brown the Chicken:
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.Brown the chicken thighs on both sides, then remove and set aside.
Sauté the Vegetables:
- In a large soup pot, heat the remaining olive oil over medium heat.Add the chopped onion and red bell pepper. Sauté for a few minutes until softened.
Cook the Stew Base:
- Add the tomato sauce, cayenne pepper, and bouillon powder to the pot. Simmer for a few minutes.Pour in the chicken stock or water and stir well.
Simmer the Chicken:
- Add the browned chicken thighs back into the pot.Stir and let the stew simmer for 10 minutes.
Finish with Peanut Butter:
- Stir in the peanut butter until fully incorporated.Continue cooking until the stew thickens to your desired consistency.
Serve:
- Taste for salt and adjust as needed. Serve the stew hot over rice, couscous, or with a side of vegetables.
