Prepare the Dry Ingredients:

  • In a large mixing bowl, combine 3 cups of self-raising flour, sugar, and cardamom powder. Mix well to ensure even distribution of the ingredients.

Add Wet Ingredients:

  • Pour in the warm milk and melted unsalted butter into the dry mixture. Mix until the dough starts to come together.

Knead the Dough:

  • Switch to using your hands and knead the dough for 5-8 minutes. The dough should be soft and slightly sticky.
    Gradually add the remaining 1/4 cup of flour while kneading until you achieve a smooth, soft dough.

Rest the Dough:

  • Cover the dough with a kitchen towel and let it rest for 10 minutes.

Roll and Cut the Dough:

  • After resting, divide the dough into two portions. Dust your working surface with flour and roll each portion to about 1/2 inch thickness.
    Cut the rolled dough into small squares or your preferred shapes.

Fry the Mandazi:

  • Heat oil in a pan over medium heat. Carefully drop the cut mandazi pieces into the hot oil.
    Fry, turning occasionally, until they are golden brown on all sides (about 5 minutes).
    Remove the mandazi from the oil and drain on a kitchen towel to remove excess oil.

Serve:

  • Enjoy your Mini Mandazi warm with tea, coffee, or as a snack.
