Ingredients
Main Ingredients:
- 2 ripe plantains
- 1 cup soft flour
- Salt to taste
- Vegetable oil for frying
Spice Blend:
- 3 scotch bonnet peppers
- 1 medium red onion
- 1 medium piece of ginger
- 1 tsp cloves
- 1 tsp black peppercorns
- 3 African orchid nutmeg (or substitute with regular nutmeg)
- 2 spring onions, chopped (for garnish)
Instructions
- Prepare the Spice Blend:In a blender, combine the scotch bonnet peppers, red onion, ginger, cloves, black peppercorns, and African orchid nutmeg. Blend until smooth.
- Mash the Plantains:Peel the plantains and cut them into large chunks.Place the plantain chunks in a bowl and mash them until smooth.
- Mix the Ingredients:Add the blended spice mixture to the mashed plantains and stir well.Season the mixture with salt to taste.Gradually add the soft flour and mix until the batter is well combined.
- Fry the Tatale:Heat vegetable oil in a saucepan over medium heat.Scoop spoonfuls of the plantain mixture into the hot oil and shallow fry.Fry each side for about 2-3 minutes or until golden brown.Remove the fried tatale and place them on a paper towel to drain any excess oil.
- Serve:Garnish with chopped spring onions and serve warm.
