This Tanzanian coconut rice is a delicious side dish made by simmering basmati rice with peas, diced carrots, and a hint of turmeric in rich coconut milk. Perfect as an accompaniment to your favorite African meals.
Equipment

Ingredients
- 1 tbsp olive oil
- 1 cup uncooked basmati rice
- 1/2 cup peas
- 1/2 cup diced carrots
- 1/2 tsp turmeric powder
- Salt
- 1 cup canned coconut milk
- 1 cup boiling water
Instructions
- Sauté the Rice:Heat olive oil in a medium-sized pot over medium heat. Once the oil is hot, add the basmati rice, peas, and diced carrots. Stir frequently until the rice turns almost white, about 3-5 minutes.
- Add Seasoning:Stir in the turmeric powder and salt, mixing well to coat the rice and vegetables.
- Prepare Coconut Water:In a separate bowl, whisk together the coconut milk and boiling water until well combined.
- Simmer the Rice:Pour 1 cup of the coconut milk mixture into the pot with the rice. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a glass lid to monitor the liquid's reduction, and cook until the rice is tender, about 15-20 minutes. Add more of the coconut water mixture as needed during cooking.
- Fluff and Serve:Once the rice is fully cooked and the liquid has been absorbed, fluff it gently with a fork. Serve hot as a side dish to your favorite meal.
Notes
- Coconut Milk: You can adjust the creaminess by adding more or less coconut milk, depending on your preference.
- Veggie Add-ins: Feel free to add more vegetables such as green beans or corn for added texture and flavor.
