  • Mix Dry Ingredients:
    In a large bowl, combine the all-purpose flour, buckwheat flour, baking soda, and salt. Whisk everything together until well mixed.
  • Add Wet Ingredients:
    Gradually whisk in the club soda until the mixture is smooth. Then, add the vinegar and whisk again to combine. The batter should be a smooth, pourable consistency.
  • Prepare the Pan:
    Heat a large nonstick skillet over medium heat. Lightly coat the skillet with oil using a paper towel to create a thin layer.
  • Cook the Injera:
    Using a scoop, pour the batter into the skillet, forming a 6-inch circle. Quickly swirl the pan to thin out the batter until it measures about 8 to 9 inches across.Cook for 1 minute until bubbles appear on the surface, then flip the Injera with a spatula and cook for another minute.
  • Stack and Soften:
    Remove the Injera from the skillet and stack it on a plate. Repeat the process with the remaining batter. The Injera will soften as it steams in the stack.
  • Serve:
    Once all the Injera is cooked, cut the circles in half and roll them into tubes. Keep them warm until ready to serve with Ethiopian dishes like Doro Wat or Mesir Wat.

Notes

  • Make Ahead: Injera can be made ahead and frozen. To reheat, thaw in the microwave or a warm oven, covering with a damp paper towel.
  • Texture: Injera may feel crisp in the pan, but will soften as it steams when stacked.
