Boko Boko Harees is a hearty, traditional Burundian dish combining tender chicken, bulgur wheat, and a rich turmeric sauce. Topped with crispy fried shallots, it’s perfect for feeding a crowd on a cozy day.

Ingredients
  

  • 1 1/2 cups bulgur wheat
  • 1 large onion diced
  • 6 tbsp ghee divided
  • 1 skinless chicken breast bone-in or boneless
  • 1 tsp salt
  • 2 tbsp turmeric
  • 3 sets chicken giblets chopped (hearts & gizzards)
  • 1/4 cup water
  • 3 tbsp sugar
  • Salt to taste
  • 3 shallots or 1 small onion thinly sliced into rings

Instructions
 

  • Soak the Bulgur:
    Soak the bulgur wheat in 4 cups of water for 30-60 minutes, adding more water if needed. Drain and set aside.
  • Cook the Chicken and Bulgur:
    In a large saucepan, heat 3 tbsp of ghee over medium-high heat. Sauté the diced onion for 4-5 minutes until tender.
    Add the chicken, salt, soaked bulgur, and 3-4 cups of water (just enough to cover the chicken).
    Bring to a boil, reduce heat to a simmer, and cook for 30 minutes, stirring occasionally, until the chicken is fully cooked.
  • Prepare the Turmeric Sauce:
    In a small saucepan, combine the turmeric, chopped giblets, 1/4 cup of water, sugar, and salt.
    Simmer for 10-15 minutes, until the giblets are tender. For a smoother sauce, strain the giblets out (optional).
  • Fry the Shallots:
    Heat the remaining 3 tbsp of ghee in a frying pan over medium-high heat.
    Fry the shallot or onion rings until browned and crispy. Remove and set aside on paper towels to drain excess oil.
  • Finish and Serve:
    Once the chicken is cooked and the bulgur has thickened into a porridge-like consistency, remove the chicken and dice or shred it.
    Stir the shredded chicken back into the bulgur, adjust seasoning with salt as needed.
    Serve the Boko Boko Harees topped with the turmeric sauce and crispy fried shallots.

Notes:
  • Giblets Optional: If you’re not a fan of giblets, you can leave them out or substitute with more chicken pieces.
  • Make-Ahead Tip: You can prepare the bulgur and chicken ahead of time and reheat just before serving.
  • Texture Tip: For a smoother texture, you can blend the sauce or leave the giblets in for a heartier feel.
