Egyptian Style Fava Bean Falafel
This Egyptian Style Fava Bean Falafel, made with fava beans and fresh herbs, is a healthier, flavorful take on a street food classic. Crispy on the outside and tender on the inside, these falafel balls are perfect when served with pita bread, veggies, and hummus.
Equipment

Ingredients
- 1 1/2 lbs dried fava beans
- 4 garlic cloves
- 3 green onions
- 1/4 white onion
- 1/4 bunch fresh dill
- 1/4 bunch fresh parsley
- 1/4 bunch fresh cilantro
- 2 tbsp cold water
- 2 tbsp whole dried coriander
- 1 tbsp whole dried fennel
- 1 tsp ground seven spice
- 1 tsp ground cumin
- Salt to taste (1-3 tsp)
- Sesame seeds for topping
- Oil for frying
Instructions
- Soak the Fava Beans:Soak the dried fava beans in water for 4-6 hours. Once soaked, drain them completely.
- Prepare the Herbs and Vegetables:Wash and drain the fresh dill, parsley, and cilantro.Combine the drained fava beans with garlic, green onions, white onion, dill, parsley, and cilantro.
- Blend the Mixture:In batches, blend the fava bean mixture in a food processor with a little cold water until smooth.Add the whole coriander and fennel seeds, and blend again. It’s fine if small pieces of the spices remain.
- Mix in the Spices:Transfer the blended mixture to a large mixing bowl and stir in the seven spice, cumin, and salt. Mix until fully combined.
Frying the Falafel:
- Form the Falafel:Using a small ice cream scooper or spoon, scoop the falafel mixture into your palm. Shape into balls.
- Add Sesame Seeds:Dip a finger into water, then into a plate of sesame seeds, and lightly tap the falafel balls to coat them with seeds.
- Fry the Falafel:Heat 2-4 inches of vegetable oil in a small saucepan over medium heat.Fry 3-4 falafel balls at a time, cooking them for 1-2 minutes on each side, or until crispy and golden brown.
- Drain and Serve:Remove the falafel from the oil and place them on a plate lined with paper towels to drain.Serve warm with pita bread, fresh veggies, and hummus.
Notes
- Frying Tip: Be sure the oil is hot before adding the falafel to avoid them absorbing too much oil.
- Serving Suggestions: Serve with warm pita bread, fresh veggies like cucumber and tomatoes, and a side of hummus for dipping.
