  • 1 red bell pepper
  • 6 red bird's eye chilies adjust to taste for heat
  • 8 cloves garlic
  • 1/2 cup extra virgin olive oil
  • 3 tbsp red or white wine vinegar
  • 1/2 tsp smoked paprika
  • 2 tsp salt
  • 1 pound cleaned tiger prawns shell on

Instructions
 

  • Roast the Bell Pepper: Lightly char the red bell pepper on an open flame or under a broiler. Once charred, place it in a brown paper bag or sealed container to soften. Once cooled, rinse off the charred skin under running water.
  • Roast the Garlic: Roast garlic cloves in a 300°F oven with about 1/2 teaspoon of olive oil for 5 minutes. Allow to cool.
  • Make the Peri Peri Sauce: In a blender, combine the roasted red bell pepper, chilies, roasted garlic, olive oil, red wine vinegar, smoked paprika, and salt. Blend until you reach your desired texture—smooth or slightly chunky.
  • Marinate the Prawns: In a container, pour about 1/2 cup of the peri peri sauce over the cleaned prawns. Seal and marinate in the refrigerator for at least 1 hour or overnight for best results.
  • Cook the Prawns: Let the marinated prawns sit at room temperature for 1 hour before cooking. Heat a skillet over medium-high heat. Sear the prawns on one side for 5 minutes, then flip and cook the other side for another 5 minutes until fully cooked.
  • Serve: Serve the prawns hot, with a side dish of your choice or enjoy them on their own. Pair with extra peri peri sauce on the side for extra heat.
