Ingredients
  

  • 1 ½ lbs 600g boneless, skinless chicken breasts (or chicken thighs)
  • ½ tablespoon garlic granules
  • ½ tablespoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon ground coriander
  • ½ teaspoon freshly ground black pepper
  • ½ tablespoon chicken stock powder optional
  • 2 ½ tablespoons olive oil
  • 1 teaspoon salt or to taste
  • 1 tablespoon lemon juice
  • 1 large zucchini courgette, cut into chunks
  • 2 mixed bell peppers cut into chunks
  • 1 large onion cut into chunks
  • Wooden skewers soaked in water for 30 minutes

Instructions
 

  • Soak Skewers:
    Begin by soaking wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.
  • Prepare Chicken:
    Place the chicken breast pieces in a bowl with enough water to cover them, add the juice of 1 lemon, and soak for 10 minutes. Remove from the water, pat dry with a kitchen towel, and cut into bite-sized pieces (1 to 1½ inches).
  • Prepare Vegetables:
    Wash and cut the zucchini, bell peppers, and onion into chunks that match the size of the chicken pieces (about 1½ inches).
  • Marinate:
    In a large bowl, combine the chicken, vegetables, garlic granules, onion powder, oregano, coriander, black pepper, chicken stock powder (if using), olive oil, and salt. Mix well to coat everything evenly. Marinate for at least 30 minutes or overnight for the best flavor.
  • Preheat Grill:
    Preheat the grill to medium-high heat (about 400°F) for 10 minutes before cooking.
  • Assemble Kabobs:
    Thread the marinated chicken and vegetables onto the soaked skewers, alternating between the two.
  • Grill Kabobs:
    Grill the kabobs for 7 to 10 minutes on each side, turning occasionally, until the chicken is fully cooked and no longer pink in the center. The total grilling time should be around 14 to 20 minutes.
  • Serve:
    Once the kabobs are cooked, remove them from the grill and serve immediately.
