
South African Koeksisters
Koeksisters are a legendary South African confectionery—a golden, syrupy, and crunchy twisted doughnut. The magic lies in the temperature contrast: deep-frying the warm, spiced dough and immediately plunging it into ice-cold, lemon-infused sugar syrup. This creates a unique texture where the outside is crisp and the inside is bursting with sweet, chilled syrup.
Ingredients
For the dough:
- 2 cup cake flour
- 21/2 tsp baking powder
- 1/2 tsp salt
- 25 g butter ,
- 1/4 cup milk
- 1/4 cup water
- 1 tsp lemon juice
For the sugar syrup:
- 2 cup sugar
- 1 cup water
- 2 ginger (3/4u201d each) fresh
- pinch salt
- 1 tbsp lemon juice
- 1 cinnamon stick
Instructions
Step 1: The "Ice-Cold" Syrup (The Secret Step)
- In a large saucepan, combine Sugar, Water, Ginger, and Cream of Tartar.2 cup sugar, 1 cup water, pinch salt
- Stir over medium heat until the sugar is fully dissolved, then bring to a boil.
- Add the Lemon Juice and simmer for about 10 minutes until slightly thickened.1 tsp lemon juice
- Remove from heat and let it cool completely. Place in the refrigerator overnight. * Note: If the syrup isn't ice-cold, the koeksisters will become soggy instead of crunchy.
Step 2: Preparing the Dough
- In a mixing bowl, sift the Flour, Baking Powder, and Salt.2 cup cake flour, 21/2 tsp baking powder, 1/2 tsp salt
- Rub the Butter into the flour mixture using your fingertips until it resembles fine breadcrumbs.25 g butter ,
- Beat the Egg and Milk together. Make a well in the center of the flour and pour in the liquid.1/4 cup milk
- Mix until a soft, pliable dough forms. If it's too dry, add a splash of milk.
- Knead the dough for about 5–8 minutes until smooth and elastic.
- Cover with cling wrap and let it rest at room temperature for at least 1 hour.
Step 3: Shaping the Braids
- Roll the dough out on a lightly floured surface to a thickness of about 5mm (1/4 inch).
- Cut the dough into rectangles (approx. 5cm x 2cm).
- Cut each rectangle into three strips, leaving them attached at the very top.
- Braid the strips tightly and pinch the ends firmly to seal.
Step 4: The Fry and Plunge
- Heat Oil to 170°C (340°F).
- Take half of your Ice-Cold Syrup out of the fridge and place the bowl into another bowl filled with ice to keep it freezing. Keep the other half in the fridge.
- Fry 3–4 koeksisters at a time until they are a deep golden brown (about 2 minutes per side).
- Immediately remove the hot koeksister from the oil and dunk it into the Ice-Cold Syrup.
- Use a weighted spoon to keep them submerged for 30 seconds to soak up the syrup.
- Place on a wire rack over a tray to catch any excess drips.
