- 2 1/2 cup water
- 2 medium mild green chili peppers
- 1 medium red onions
- 2 medium tomatoes
- 1/2 tsp black pepper
- 1/2 tsp ginger powder
- 1 tbsp dijon mustard
- 2 medium limes, juiced
- salt
- 2 tbsp oil
Instructions
- Cook the Lentils: In a medium saucepan, combine the rinsed lentils and 2 ½ cups of water. Bring to a boil, then reduce the heat to a simmer. Cook for 20-25 minutes, or until the lentils are tender but not mushy. Drain any excess water and set the lentils aside to cool slightly.
- Prepare the Vegetables: While the lentils are cooking, finely chop the green chili peppers and the red onion, and dice the tomatoes. Place them together in a large mixing bowl.
- Make the Dressing: In a small bowl, whisk together the olive oil, fresh lime juice, Dijon mustard, ginger powder, and black pepper until well combined.
- Combine the Salad: Add the slightly cooled, drained lentils to the large bowl with the chopped vegetables. Pour the dressing over the top.
- Mix and Season: Gently toss everything together until the lentils and vegetables are evenly coated with the dressing. Season generously with salt to your liking and mix again.
- Chill and Serve: For the best flavor, cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve chilled or at room temperature. Enjoy!
