West African Tsire Koftas
These flavorful West African-inspired lamb koftas are rolled in a deliciously spiced peanut coating known as Tsire powder. Grilled or barbecued to perfection, they offer a delightful blend of smoky and spicy flavors, perfect for any gathering.
Equipment
- Bamboo skewers (pre-soaked)
- Grill or barbecue
- Electric grinder or mortar and pestle (for Tsire powder)
Ingredients
For the Koftas:
- 600 g diced lamb
- 2 tbsp Greek yogurt
- 1 small onion finely chopped
- 1 garlic clove crushed
- 1/4 tsp chili powder optional
- Salt and pepper to taste
- 1 beaten egg
- Olive oil spray
- Fresh mint for garnish
For the Tsire Powder:
- 1/2 cup salted peanuts
- 1 tsp chili powder optional
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground cinnamon
Instructions
- Prepare the Tsire Powder:Grind the peanuts into a coarse powder using an electric grinder or a mortar and pestle.Stir in the chili powder, ginger, nutmeg, cloves, and cinnamon until well combined. Set aside.
- Make the Koftas:In a food processor, blend the diced lamb, Greek yogurt, onion, garlic, chili powder, salt, and pepper until smooth. Divide the mixture into 12 equal portions. With wet hands, shape each portion into a sausage-like shape.
- Assemble the Koftas:Push a pre-soaked bamboo skewer into each kofta and press the meat onto the skewer.Dip each kofta into the beaten egg, then roll it in the prepared Tsire powder until fully coated.
- Grill or Barbecue:Lightly spray the koftas with olive oil. Grill or barbecue them over medium heat, turning occasionally, for about 10 minutes or until the lamb is cooked through and browned on the outside.
- Serve:Garnish the koftas with fresh mint leaves and serve hot.
Notes
- Tsire Powder: The peanuts can be ground to a coarse or fine powder based on your preference. Adjust the level of chili powder for more or less heat.
- Alternative Shapes: Instead of using skewers, you can shape the lamb mixture into balls or patties if preferred.
- Serving Suggestions: Serve with a side of flatbread or a fresh salad for a complete meal.
