Ingredients
  

  • 2 cups samp rinsed 3 times and drained
  • 1 tbsp cooking oil
  • Water enough to cover samp
  • 1/2 tsp Aromat seasoning or salt to taste
  • 1/8 tsp turmeric
  • 1/2 cup mixed vegetables frozen or fresh

Instructions
 

  • Prepare the Samp:
    After rinsing the samp 3 times and draining it, add it to a large pot.
  • Add Oil and Water:
    Pour 1 tablespoon of cooking oil into the pot with the samp. Add enough water to completely cover the samp, ensuring that it has enough liquid to cook and expand.
  • Bring to a Boil:
    Place the pot over medium heat and bring it to a boil. Once the water starts boiling, reduce the heat to low or medium-low.
  • Slow Cooking:
    Let the samp cook on low heat for 3 to 4 hours, stirring every 30 minutes to prevent it from sticking to the bottom of the pot. Continuously add water as needed, keeping the samp covered with water until it becomes soft and well-cooked.
  • Season and Add Vegetables:
    Once the water is absorbed and the samp is soft, add 1/2 teaspoon Aromat seasoning and 1/8 teaspoon turmeric. Gently stir to combine.
  • Add Mixed Vegetables:
    Add 1/2 cup of mixed vegetables to the pot. Stir them into the samp and let the mixture cook on low heat for an additional 5 minutes, allowing the vegetables to soften and blend with the flavors.
  • Serve:
    Once everything is fully cooked, serve warm as a hearty side dish or enjoy it as a meal on its own.

Notes

  • Cooking Time: Cooking samp takes time, but the slow cooking process is what gives it its soft, fluffy texture.
  • Seasoning Adjustments: Feel free to adjust the Aromat or turmeric to suit your taste.
  • Variations: You can add butter or milk at the end of the cooking process for extra creaminess.
