  • 4 perfectly ripened plantains
  • 1/2 a shallot
  • 1/2 red onion
  • 2 small red Serrano chili (may substitute with habanero/scotch bonnets/ Petrie bells/jalepeno)
  • 1/4 cup roasted peanut butter
  • 1/4 cup roasted peanuts
  • 1 tsp dawadawa
  • Salt to season
  • 4 tbsp palm oil
  • 1 Scallions chopped for garnish
