Ugandan Rolex with Avocado
The Ugandan Rolex is a beloved street food that brings together a soft chapati wrap, a flavorful vegetable omelette, and the creamy addition of ripe avocado. It's a satisfying, quick meal perfect for breakfast or as a snack.
Ingredients
For the Chapati:
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tbsp oil plus extra for cooking
- 1 cup warm water
For the Omelette:
- 4 large eggs
- 1 tomato finely chopped
- 1 small onion finely chopped
- 1 green bell pepper finely chopped
- 1 carrot grated
- 1/4 cup shredded cabbage
- Salt and pepper to taste
- 1/2 tsp paprika optional
- 1/2 tsp ground black pepper
For Serving:
- Fresh coriander leaves optional, for garnish
- 1 ripe avocado sliced
Instructions
Prepare the Dough:
- In a large bowl, mix 2 cups of all-purpose flour and 1 teaspoon of salt.
- Add 1 tablespoon of oil and gradually add 1 cup of warm water, mixing until a smooth dough forms.
- Knead the dough on a floured surface for about 5 minutes until it's elastic and smooth.
- Cover the dough with a damp cloth and let it rest for 20 minutes.
Prepare the Vegetable Mixture:
- In a bowl, combine the finely chopped tomato, onion, green bell pepper, grated carrot, and shredded cabbage.
- Season the vegetable mixture with salt, pepper, and 1/2 teaspoon of paprika (optional). Mix well.
Prepare the Omelette:
- In a separate bowl, beat the eggs and season with a pinch of salt and ground black pepper.
- Heat a little oil in a frying pan over medium heat.
- Pour half of the beaten eggs into the pan, spreading them out evenly.
- Sprinkle half of the vegetable mixture evenly over the eggs.
- Cook until the omelette is set and slightly golden on the bottom, then carefully flip it to cook the other side. Once cooked, set aside.
- Repeat with the remaining eggs and vegetable mixture to make the second omelette.
Prepare the Chapati:
- Divide the dough into 4 equal portions and roll each portion into a ball.
- On a floured surface, roll out each ball into a thin, round chapati.
- Heat a little oil in a frying pan over medium heat.
- Cook each chapati for about 1-2 minutes on each side, until lightly browned and cooked through. Set aside.
Assemble the Rolex:
- Place one chapati on a flat surface.
- Place one omelette on top of the chapati.
- Add slices of ripe avocado on top of the omelette.
- Roll the chapati, omelette, and avocado together tightly to form a wrap.
- Repeat with the remaining chapati, omelette, and avocado.
Serve:
- Cut the Rolex wraps in half and garnish with fresh coriander leaves if desired.
- Serve warm and enjoy this delicious Ugandan street food classic!

- Avocado Alternative: For a variation, you can substitute the avocado with your favorite filling like cheese or sautéed mushrooms.
- Make Ahead: The chapati can be made ahead of time and reheated before serving.
